The Providence Taps Hospitality Veterans to Run Three Signature Restaurants, Food and Beverage Service

Professionals Bring Elevated Cuisine, Service and Dining Experiences to Assisted Living Community.

Fairfax, VA. (March 8, 2021) — Three highly experienced food service professionals joined the growing management team at The Providence, a new rental-model assisted living community in the MetroWest neighborhood of Fairfax, Virginia. 

Sabrine Marques will serve as Dining Services Director, overseeing the food and beverage program at the brand-new community.  She arrives from PassionFish in Bethesda, where she served as general manager for five years after opening the restaurant in 2015.  Ms. Marques brings a fresh approach to the community by offering dining experiences comparable to contemporary restaurants with an exceptionally high level of attentive service.  

Ms. Marques identified Joseph Cassis, who also opened PassionFish Bethesda and previously worked at PassionFish Reston, to serve as Dining Room Supervisor.  Mr. Cassis has extensive experience as a beverage director designing bar menus and wine pairings.  He will bring his wine and cocktail expertise to the dining room floor as part of the luxury amenities package for residents of The Providence.

After working in prestigious kitchens at The Greenbrier, The Gaylord and Pinehurst and serving as the Executive Chef at the Hyatt Regency Hotel in Fairfax, Obataiye Allen will bring elevated cuisine with an aesthetic presentation to the three restaurants opening at The Providence. Executive Chef Allen has developed special menus for the community’s signature restaurants.

  • The formal Great Falls restaurant is reminiscent of a high-end steakhouse showcasing fresh, farm-to-table cuisine and features a demonstration kitchen with an open-hearth oven.

  • The Wolf Trap Bistro is a casual dining experience offering breakfast and lunch, snacks and entrees along with wide variety of coffees and desserts. 

  • The Lounge includes a full bar and will featuring Virginia wines and local beers. The menu offers shares and starters as well as a selection of salads, sandwiches and flatbreads. 

“We are beyond excited to bring such a powerhouse team to The Providence to oversee our restaurants and food service,” said Annamarie Mariani-Huehn, Executive Director. “We specifically targeted our search to professionals with experience in high-end restaurants and resorts, sticking to our commitment to bring a new model of assisted living to the market.”

It was announced last fall that Ms. Mariani-Huehn and Sales Director Amanda Max joined The Providence team to launch pre-leasing in advance of the grand opening on March 1st. 

Annamarie Mariani-Huehn oversees operations, care and programming.  She brings nearly three decades of senior care and services experience and a robust local network, most recently serving as executive operations officer for Hunters Woods at Trails Edge in Reston.

Amanda Max is responsible for marketing, community outreach and advising prospective residents.  She previously worked for Sunrise Senior Living for six years, most recently as sales and marketing director for its Fort Belvoir, Virginia location.
